- 2 stalks celery, chopped
- 2 carrots, peeled and chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 teaspoons Italian seasoning
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 2 bay leaves
- 1 handful of fresh spinach leaves, optional
- Fresh basil for garnish, optional

Tuck the bay leaves into the mixture, ensuring they’re fully submerged for maximum flavor. - Slow Cook:

- High Setting: For a quicker option, cook on high for 3-4 hours.
- Finish with Spinach (Optional):
