Ingredients

4 chicken breasts that have been boneless and skinless

Toss with salt and pepper for flavor.

1-tsp. olive oil

2 cups cut-in-half grape tomatoes

3 minced garlic cloves

balsamic vinegar, 1/4 cup

1.5 milliliters of dried oregano

dried basil, 1 teaspoon

One cup of mozzarella cheese, shredded

1/2 cup chopped fresh basil

Additional leaves of basil for finishing

Preparation

  1. Set oven temperature to 375 degrees Fahrenheit (190 degrees Celsius).
  2. Add salt and pepper to the chicken breasts.
  3. In a big skillet, heat the olive oil over medium heat. Sear the chicken for three to four minutes each side, or until it becomes brown.

Place the chicken in a baking dish that has been buttered.

  1. Saute the garlic for about 1 minute, or until it becomes fragrant, in the same skillet.
  2. After that, throw in the tomatoes, balsamic vinegar, oregano, and dried basil. After the tomatoes start to soften, sauté them for about 5 minutes.

Next, top the chicken in the baking dish with the tomato mixture. On top, crumble some mozzarella cheese.

  1. Cook the chicken for 20-25 minutes in a preheated oven, or until no longer pink inside.
  2. After taking it out of the oven, sprinkle fresh chopped basil and extra leaves of basil on top.

Tips and Variations

Add a cheesy touch by topping the mozzarella with Parmesan before baking. Season the tomato combination with a sprinkle of red pepper flakes if you like your food on the spicy side. Vegetarians and those watching their weight may enjoy this dish just as much by replacing the chicken with thick slices of eggplant.
